亞洲旅遊台《與海島的約定》邀請進擊的饕客,中式主廚吳秉承和西式主廚王輔立擔當金門美食的主持人,在中西餐飲各站一方的型男主廚首度大合併。從早「品食」品到晚,當工作人員端上熬煮兩小時、裡頭還有幾顆小肉丸的金門廣東粥時,讓兩位大廚原本以為來金門就是負責吃,當下覺得來金門很幸福,沒想到甫用餐完畢,兩人馬上被工作人員賦予任務,必須尋找當地嚴選食材,進行一場料理東西軍。
初訪金沙鎮的良金酒糟牛牧場的兩位主廚,還以為來到了葡萄酒莊,整個牧場竟然是充斥著酒香味,老闆帶著兩位主廚到自己店裡,下戰帖表示自己養的酒糟牛絕對好吃,吳秉承主廚一臉就是吃遍江湖的指著旁邊的碗說:「頭家,你這塊牛鍵沒有燉爛不可能咬得下去」,認為老闆根本就是老王買瓜,老闆索性跟兩位主廚賭上一頭牛,如果不好吃就送他們一隻牛。沒想才剛試了招牌的酒糟牛肉麵,就好吃到王輔立主廚直呼:「怎麼可能,真的是甜的耶!」,接著又端上賭上一條牛的川燙牛鍵,滾燙的熱水一淋、肉一膨,吳秉承主廚忍不住馬上夾了一塊吃,馬上認輸:「這滋味就是牛隻在嘴裡跑啊」,工作人員在旁偷笑師傅的反應真的很誇張。不過吳秉承主廚私下表示,這真的是他做菜以來,吃過最好吃、最甜、最有彈性的牛肉,絕對會為了一碗牛肉麵數度造訪金門。
兩位主廚的任務,不僅是尋找當地食材,也參加當地的芋頭節,榮獲第一名的芋頭王大的像狼牙棒一樣大;還有用酒糟醃製的酸白菜,吃到會回甘。兩人親自上刀山下油鍋的去採集各種海鮮或蔬菜,其中他們抓準了潮汐,到四百年的石蚵田,「自己的蚵自己採」一腳踩進泥巴,兩位主廚在之後受訪時疲憊的表示:「當主廚只要出張嘴食材就來了,我們真的是第一次”下海”動手採蚵這些東西」。不過採蚵的過程中,吳秉承主廚心裡有些感慨,因為採集時每踩一步就陷下去一步,整個田採完體力也透支了,然而正因為太辛苦,年輕一輩的人不會想接手,更別提傳承。但是想起鮮蚵的滋味,兩位主廚都大讚:「小小顆的咕嚕咕嚕超級好吃,難怪金門到處都用鮮蚵做料理」。
